Hand-harvested in February from estate vines at 450m altitude. Only whole, unbroken clusters are accepted.

Slow fermentation in clay tinajas buried in earth, maintaining the cool temperature that preserves every aromatic compound.

A single pass through the 1899 copper falca. There is no second distillation. What emerges is final.

Three months minimum in glass — no wood, no influence. The spirit settles into itself.

Heritage Timeline

1532 – 1553

Arrival of Vines

Spanish conquistadors introduce European grape varieties to South America, establishing the foundational vineyards along the Peruvian coast.

16th – 17th Century

Caravelí Viticulture

Grape cultivation takes root in the high-altitude desert valleys of Caravelí in Arequipa, leveraging unique mountain-to-coast terroir at 1,800 meters elevation.

1990 – 1991

Pisco Denomination

The Peruvian government officially establishes the formal Denomination of Origin for Pisco, legally designating Arequipa as an authentic producing region.

Modern Era

Inception of ACAPANA

Development begins on ACAPANA as an artisan, small-batch 40% ABV Peruvian Pisco Moscatel sourced directly from the rugged high-elevation terrain of Caravelí.
